My PC has 3 HDD's, a 74gb Raptor and 2 X Maxtor 250gb. How to setup for Windows 7OS, programs,video and photos?

You can pretty much follow the same setup you currently have.
Most likely, you're using one of the three drives for your operating system, and the remaining disk space for your stuff.
